Can oily be dried
The fruiting of the described representatives of the mushroom kingdom falls on the period from May to October. Usually these mushrooms grow en masse, so at one time they can be collected a lot. And since the period of consumption of fresh mushrooms is only 15 hours when stored in the refrigerator, the rest of the crop can be dried. Oil cans are great for this type of storage. After drying, they retain most of the vitamins and minerals and remain as healthy as the raw product.
Soups can be made from dried mushrooms, after soaking add them to salads, main dishes, make sauces from them. When dried, the product reduces its size by 5–6 times, while its calorie content increases. This must be taken into account when cooking dishes.

Drying preparation

How to dry oil

In the oven
Drying the oil in the oven is simple. For this it is necessary to cover the baking sheet with parchment and put mushroom plates on it in one layer. To start the oven should be heated to + 45 ... + 50 ° С. In this temperature regime, mushrooms must be dried for 4 hours. In the future, increase the degrees to + 70 ° C. In such conditions, keep the product almost ready. In order not to overdo it, drying should be carried out at + 50 ° C.
It is also important to gradually move the pan from an extremely high position 2-3 positions below. The oven door must be kept ajar at all times.
In the electric dryer
This method is one of the fastest and easiest. For mushroom drying, it is better to choose an electric dryer with a built-in fan and thermostat.
The technology for preparing a dried product is as follows:
- Turn on the temperature mode in the unit + 45 ... + 50 ° С (in some models, the installation + 60 ° С may be required).
- Arrange pieces or whole mushrooms on pallets in one layer.
- Every hour, change their position and mix the product.
- To sustain 5-6 hours, periodically monitoring readiness.

In the air grill
With this method, mushrooms should also be distributed in a single layer over the wire rack. So that small specimens do not fall through the bars, under the bottom it is worth spreading parchment. In the device you need to set the temperature + 70 ... + 75 ° C. Blowing power should be at maximum. Cover the lid completely is not necessary to avoid cooking mushrooms. The drying process in the air grill lasts 2 hours.
On a thread
One of the oldest and longest drying methods is string mushrooms on a thread or fishing line and hang them on a nail above a gas stove or in a well-ventilated room, on a terrace, under a canopy. In this position, they should be 2-3 weeks.
If mushrooms hang in the kitchen, it is important that they are not saturated with extraneous odors. To do this, while cooking a strongly smelling dish, they must be taken to another place.
In the oven
If someone in the country or in the countryside has preserved the usual wood or coal stove, then you can dry the mushrooms in it. To do this, place the product on pallets and put them in a warm oven.
Important! If the mushrooms are very dry, then, before being sent for storage, they should be ground in a coffee grinder to powder. You can make a mixture with dried dill, caraway seeds, bay leaf, which can be added to dishes as seasoning.
With this method it must be controlled so that the temperature is not too high. If hissing is heard, and the moisture released from the mushrooms boils, then it is necessary to remove the pallets and wait until the oven cools down. Drying in this way is necessary for four to five days.
In the microwave
To properly dry the mushrooms in the microwave, the following steps must be taken:
- Cover the flat plate with baking paper.
- Put mushroom plates on it.
- Turn on for a quarter of an hour.
- Open the door.
- Ventilate for 5–10 minutes.
- Re-place the plate and turn on the timer for a quarter of an hour.
- Repeat the procedure 3-5 times, if necessary - longer.
On air
Under natural conditions, mushrooms are dried, laying on a horizontal surface on pallets or nets. They should be placed in a place where the sun does not fall and where there is good air circulation. It can be a terrace or a plot under a canopy. Periodically, the mushrooms must be mixed so that drying occurs evenly. In this position, the product must be kept for several weeks.
Dried Mushroom Storage
The dried product is suitable for use for 1–1.5 years, but with the condition that it is stored in the correct temperature, humidity, heat and light conditions. So, the best storage methods are in cloth bags or in paper bags, cardboard boxes. These materials pass air well. It is also allowed to place the dry product in glass and wooden containers. In this case, the containers should be tightly closed.
It is possible to save mushrooms in limbo. For example, if they were dried strung on a rope, then they can be left that way, but wrapped with cloth or gauze to avoid the penetration of insects.
Important! Before sending the dried product for storage, make sure that it is completely dried. Mushrooms that are moist and soft in the middle will mold or rot very quickly.
The optimum temperature for storing dried oils is + 11 ... + 15 ° С. It is under such temperature conditions that the mushrooms will be suitable for consumption as long as possible. Throughout the time it is necessary to periodically remove the product and carefully inspect it.
In order for the product to retain valuable elements longer, it must be stored in a room where there is no sunlight, humidity, high temperatures. Mushrooms should not be kept close to strong-smelling foods.
It is allowed to store oil in the refrigerator, in a plastic container or in a glass jar. The cellar is not suitable for this purpose due to increased humidity, which increases the risk of mold on the product.
