Interview with Ivan Evdokimov: About the Conference on Solutions in the Field of Membrane Methods at DairyTech 2020
The market for stock products from secondary dairy raw materials is developing rapidly. It is membrane fractionation and concentration that opens up prospects for obtaining innovative ingredients and products from dairy raw materials.
Ivan Evdokimov, Professor, Doctor of Technical Sciences, Head of the Basic Department of Milk and Dairy Products Technology at the North Caucasus Federal University will become the moderator of the conference “Solutions in the field of membrane methods and the development of the market of ingredients from dairy raw materials” February 18, 14:00 - 17:00 in the Conference Hall L of the international exhibition of equipment for the production of milk and dairy products DairyTech 2020.
On the eve of the exhibition, the speaker gave a short interview where he shared the key points of the conference, voiced his expectations and forecasts.
- Ivan Alekseevich, you have been conducting a “membrane” session of the exhibition’s business program for several years in a row. Why do you think the topic of the application of membrane technologies does not lose its relevance?
— Membrane technology is an interdisciplinary field, including membranes, modules, installations and, in fact, technology. This area continues to develop dynamically and opens up new possibilities for deep fractionation of minor components of dairy raw materials that have never been previously produced in practice. These components were studied in scientific experiments, and their cost was enormous.
- How will the Conference on Solutions in the Field of Membrane Methods in 2020 differ from last year?
- Given the high demand for ingredients from secondary dairy raw materials in the world market, at the conference 2020 emphasis will be placed on the use of membrane methods for innovative high value-added products.At the previous conference in 2019, we examined the economic and environmental aspects of baromembrane concentration and demineralization technologies for milk raw materials, primarily whey.
- How do you assess what new membrane tasks will help dairy producers solve? Will they be able to become the main technical driver for the development of the dairy industry, or are they already?
- To date, membrane methods in the dairy industry have not yet reached their “peak”. The researchers' desire to obtain membranes with a narrow pore dispersion, characterized by high selectivity with respect to whey protein, sodium chloride, or another component of dairy raw materials, to create flow / flow membrane units that reduce the technological cycle, will inevitably lead to an increase in the efficiency of the membrane fractionation and concentration process, and, accordingly, to reduce the cost of processing.
